Grilled Cheese Bikini Bite
Yields 10-12 bites – depending on how many bites you want!! You can share these or keep them all to yourself. 😉
- 3-5 Campari tomatoes
- 1 package of Queso Blanco
- Pickled Red Onion – combine ingredients below:
- 1/2 red onion, sliced thinly
- 2 tbsp sugar
- 2 tbsp white wine vinegar
Slice tomatoes and place on serving dish. Preheat pan with olive oil on medium heat. Slice cheese into bite sized pieces appropriately sized for the tomatoes. Place cheese pieces in sauté pan and brown until slightly past golden brown, approximately 2 minutes. Flip to the other side and repeat. Note: This recipe must be made with queso blanco cheese or you will have a pan full of melted cheese – not that a pan full of melted cheese is a bad thing – but it’s not what we are going for here. Remove browned cheese and sit atop the tomato garnish with picked red onion and chopped scallions.
