The Sunday scaries are setting in but we’re starting the week off right with a delicious summer salad to satisfy both our sweet and savory cravings and get our brains focused!
Summer Salad with Fig Vinaigrette
- Baby arugula
- Sliced strawberries
- Sliced figs (any variety)
- Crumbled feta (we used feta in brine)
Fig Vinaigrette Dressing Ingredients:
- 1 cup Original Kikkoman original rice wine vinegar
- 1/2 cup olive oil
- 1/3 cup Dalmatia fig jam
- 1/4 cup water
- 1 tbsp Wegman’s Honey Dijon Mustard
- 1 tsp lemon zest
- 1/2 tsp salt
Add fig jam and mustard to mixing bowl. Whisk until thoroughly mixed. While whisking pour olive oil in a steady stream. Add remaining ingredients whisk and chill before serving.
