Turkey Cocktail Meatballs with Green Goddess Dressing

Meatballs

  • 1 lb ground turkey
  • 1/4 cup whole milk
  • 1/4 cup Panko bread crumbs
  • 2 tbsp fresh chopped parsley
  • 1/4 cup minced onion
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • 2 minced garlic cloves
  • 1 egg
  • 1 1/2 tsp salt – additional to taste

Preheat oven to 350 degrees. Add all ingredient to a large mixing bowl and knead with hands until thoroughly combined. Make a small tester meatball and microwave for 30-45 seconds to taste for seasoning.  Roll into bite sized meatballs. Add 2 tbsp olive oil to the bottom of a large cast iron skillet and heat to medium-medium high.  Cook meatballs for approximately ten minutes or until golden brown on each side.  Transfer pan to oven for 5-10 minutes of additional cooking time depending on meatball size. Drizzle with green goddess dressing and garnish with fresh chopped parsley.

Green Goddess Dressing

  • 1 cup fresh parsley
  • 1/4 cup lemon juice
  • 1/3 cup chopped scallion
  • 1 large garlic clove
  • 2 tbsp fresh chopped basil
  • 1 tsp fresh chopped tarragon
  • 1/3 cup sour cream
  • 1/3 cup mayonnaise
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tbsp olive oil
  • 1 tbsp rice wine vinegar

Add all ingredients to your Vitamix and blend on medium high until smooth. Taste for seasoning. Use this as a sauce or salad dressing!!! Enjoy!
