They say a Sunday well spent brings a week full of content, and APWU says that’s true! We’re meal prepped and ready to enjoy a family dinner complete with these Chicken & Mediterranean Olive Meatballs!

Chicken & Mediterranean Olive Meatballs


  • 1 lb ground chicken
  • 1 lb Whole Foods Mild Italian Chicken Sausage- removed from casing
  • 1/2 cup Parmesan cheese
  • 1/2 cup minced Mediterranean olive mix
  • 2 large eggs
  • 3 minced garlic cloves
  • 1/4 cup minced sweet onion
  • 1/2 cup panko bread crumbs
  • 1/4 cup half and half
  • 1/2 tsp salt
  • 2 tbsp chopped oregano
  • 1/2 tsp red pepper flakes


Preheat your oven to 400 degrees. Add all ingredients to a large mixing bowl and fold with hands until thoroughly mixed. Measure out one tbsp and cook in the microwave for 30 seconds, then taste for seasoning. Brush your baking sheet with olive oil.  Portion out into 1.5 tbsp balls and brush each meatball with olive oil. Bake for 25 minutes. Garnish with freshly grated Parmesan cheese, a sliced green olive, and freshly chopped oregano. Enjoy!
