Parmesan Bacon Cauliflower Mash


Ingredients

  • 1 large head of cauliflower
  • 2 tbsp bacon fat
  • 1 lb bacon
  • 4 tbsp Parmesan cheese
  • 3 tbsp salted butter
  • Salt and black pepper to taste

Instructions

Remove any leaves and cut cauliflower into florets. Place your steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 10 minutes or until fork tender. If you don’t have a steamer insert you can boil to cauliflower until tender.  Cook one lb of bacon until crispy and reserve the bacon fat. Remove from heat and drain if necessary. Transfer half the cauliflower to a food processor; in batches, cover and blend on high until you reach the desired consistency.  This is all about personal preference- we like a little texture in our mash so we don’t blend until entirely smooth. Add bacon fat, butter, Parmesan, black pepper, and salt to taste.   Stir until combined. Top with additional Parmesan and crumbled bacon. Enjoy!
