Banana Coconut Chia Seed Pudding1


  • 1/2 cup black chia seeds
  • 1 tbsp honey
  • 5 tbsp sweetened cream of coconut
  • 1 cup macadamia / almond milk
  • 1, 13.5 oz Native Forest Organic Light Coconut Milk
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1 banana, petite dice
  • 1/2 cup sweentened shredded coconut
  • 2 oz dark chocolate


Whisk cream of coconut, honey, macadamia nut milk, vanilla, cinnamon, and coconut milk until well combined. Stir in diced banana and chia seeds. Refrigerate for 4 hours and garnish with sweetened coconut flakes, a banana slice, and shaved dark chocolate.  Enjoy!
