Soon enough everyone will be donning dollar store sombreros and taking shots of Patrón all in the name of Mexico. Get ready for #CincodeMayo with APWU this week starting by dipping your tortilla chips into APWU Salsa Verde!

APWU Salsa Verde


  • 1 1/2 lbs husked tomatillos
  • 1/2 large sweet onion
  • 1 large garlic clove- additional to taste
  • 2 jalapeños deseeded
  • 1 Serrano pepper deseeded
  • 2 tbsp olive oil
  • 1/2 tsp salt - additional to taste
  • 2 tbsp lime juice
  • 1 tsp sugar - additional to taste
  • 1/2 cup fresh cilantro


Husk and quarter your tomatillos, rough chop onion, deseed jalapeños and serranos. Preheat olive oil in a large sauté pan to medium-high. Add the peppers, tomatillos, and onion to the sauté pan and cook undisturbed until they begin to char then flip and brown the other side. Transfer to a good processor and add salt, sugar, lime juice, a garlic clove, and cilantro, and pulse until you reach the desired consistency (we prefer a little texture, so we don’t pulse until smooth).  Taste for seasoning.  Refrigerate until ready for use. Enjoy!
