So you’re torn between hosting a Kentucky Derby soiree and a Cinco De Mayo fiesta on Saturday? Us too! But we created an appetizer that pays tribute to both… a Salmon Jalapeño Chèvre Burrito Bites!! Spicy and decadent, yet refined and classy… kinda like APWU!
- 7 oz First Light Farm & Creamery Wild Chive and Onion Chèvre
- 8 oz Scottish smoked salmon
- 1 brunch fresh chives
- 1 large jalapeño deseeded and julienned
- 1 lime- segmented
Julienne the jalapeño pepper and slice the chives proportionally to the jalapeños.
Line your counter top with wax paper and lay your sliced salmon flat. Using a cheese knife spread each piece with a thin layer of goat cheese. Lay 2-3 pieces of jalapeño and 2 chives and gently roll them. Top with a small dollop of goat cheese, a segment of lime, and a small piece of chive. Serve immediately. Enjoy!
