Crab & Red Pepper Stuffed Tomatoes

  • 1 lb lump crab meat
  • 6 tbsp mayonaise
  • 1/2 cup minced red bell pepper
  • 1 tsp stone ground mustard
  • 2 tbsp lemon juice
  • 1 1/2 tsp Old Bay seasoning
  • 1/2 cup Panko bread crumbs
  • 1 large egg
  • 20 Campari tomatoes
  • 3 tbsps melted butter


Preheat oven to 350 degrees.

Cut a thin slice off the top of each tomato. Remove the pulp with a small spoon or melon baller. Invert onto paper towels to drain. Melt butter in a small dish and set aside. Combine all the remaining ingredients in a medium-size mixing bowl and fold until well combined. Stuff tomatoes, arrange in a baking dish and brush each with butter using a silicone basting brush. Bake for approximately 15 minutes.
