Green Tomato Salad with Sweet Dill Vinaigrette

  • 2 large green tomatoes
  • 2 tbsp granulated sugar
  • 1 1/2 tbsp rice wine vinegar
  • 1 1/2 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • 3 tbsp finely chopped dill
  • 1/4 tsp Kosher Salt - additional to taste


Whisk together sugar, olive oil, vinegars, and salt until sugar is dissolved. Medium dice the tomatoes and finely chop the dill and transfer to a medium-sized mixing bowl.  Pour dressing over the tomatoes and refrigerate for 1 hour add additional salt to taste and serve chilled.  Enjoy!
