Mint Nectarine Pico de Gallo


  • 2 cups finely diced, firm nectarines
  • 4 tbsp freshly squeezed lime juice
  • 4 tsp pure maple syrup
  • 3 tbsp finely chopped mint
  • 1 1/2 tbsp olive oil
  • 1 cups finely minced jalapeƱo
  • 2 tbsp minced red onion
  • Salt to taste


Gently stir nectarines, onion, jalapeƱos, and mint until well mixed. In a separate bowl whisk together olive oil, maple syrup, and lime juice. Pour dressing over the chopped mixture and fold until evenly coated. Salt to taste. Refrigerate for 30 minutes prior to serving with your favorite tortilla chips!  Enjoy!
