Roasted Garlic Pesto Hummus Cucumbers


  • 1 lb traditional hummus
  • 2 tbsp lemon juice
  • 4 tbsp fresh basil pesto
  • 2 tbsp olive oil
  • 2 tbsp roasted garlic (mashed)
  • 2 cloves fresh garlic - minced
  • 1/4 tsp salt
  • 6-8 mini cucumbers


Whisk together the olive oil, mashed roasted garlic, salt, lemon juice, pesto, and fresh garlic. Fold in hummus until well combined.  Cut mini cucumber into approximately 1 1/2 inch slices and hollow out the center using a small melon baller.

Fill each cucumber with the hummus and top with a small dollop of pesto. Garnish with a basil leaf.  Enjoy!
