Lobster Lettuce Cups


  • 2 heads baby Romaine Lettuce
  • 2 cups cooked lobster meat
  • 3 1/2 tbsp prepared mayonnaise
  • 1 tbsp finely chopped tarragon
  • 1 tbsp finely chopped chives
  • 2 tbsp lemon juice
  • 1/2 tsp lemon zest
  • Salt and freshly cracked black pepper to taste


Whisk together lemon juice, mayonnaise, fresh herbs, and lemon zest until well combined. Add lobster meat to the dress and gently fold until evenly coated. Taste for seasoning and spooning into baby Romain lettuce leaves. Too with additional fresh herbs and serve with a lemon wedge.   Enjoy!
