Honey Hot Chicken Meatballs


Ingredients

Meatballs

  • 1 lb ground white meat chicken
  • 1/4 cup onion
  • 1/4 cup jalapeño
  • 1/4 cup panko
  • 1 tbsp half and half
  • 3 minced garlic cloves
  • 1 large egg
  • 1 cup finely shredded Monterey Jack Cheese
  • 1/2 tsp salt
  • 2 oz crumbled blue cheese
  • Thinly sliced green onion
  • 1 tbsp butter

Honey Hot Sauce

  • 1/4 cup Frank's red hot sauce
  • 1/4 cup seasoned rice wine vinegar
  • 2 tbsp honey
  • 2 tbsp butter
  • 1 tbsp Tabasco sauce
  • 1 minced garlic clove

Instructions

Preheat the oven to 400 degrees. Mix the ground chicken, egg, Monterey Jack cheese, chopped jalapeño, onion, panko, half and half, and garlic. Season with additional salt and pepper to taste. Roll into balls (approximately 1 tbsp) and arrange on a baking sheet. Top each meatball with a thin coat of butter. Bake for 20-25 minutes. In a separate pan add hot sauce, vinegar, honey, and garlic. Simmer on medium until slightly thickened. Removed from heat and whisk in the butter. Removed the meatballs from the oven and baste with a think layer of the hot sauce. Broil on high for 1-2 minutes. Glaze with additional hot sauce and garnish with crumbled blue cheese and thinly sliced green onion.
