APWU Antipasto Crostini

  • 1/2 cup finely chopped mixed Mediterranean olives
  • 3/4 cup chopped Genoa salami
  • 1/4 cup marinated artichoke hearts
  • 3/4 cup APWU marinated mushrooms
  • 1/2 cup petite diced mild Gouda
  • 1 medium garlic clove
  • 1 tbsp chopped green onion
  • 2 tbsp chopped parsley
  • 2 tbsp grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 1/2 tbsp white wine vinegar
  • 1 box crostinis
  • pinch of red pepper flakes


Chop olives, artichokes, mushrooms, cheese, salami, parsley, and green onion. Add all ingredients to medium sized mixing bowl and fold with a rubber spatula until combined. Serve on crostini. Enjoy!
