APWU Char Grilled Salsa

Ingredients

  • 2 lbs tomatoes
  • 2 jalapeño peppers
  • 1 Poblano pepper
  • 1 large minced garlic clove
  • Zest and juice of 1 lime
  • 1 1/2 tsp sugar
  • 2 -3 tbsp olive oil
  • 1/2 large sweet onion
  • Salt to taste

Instructions

Preheat grill to 500 degrees. Halve peppers and remove stems. Coat peppers, tomatoes, and onions with olive oil and salt generously. Grill in vegetable grill basket for 7-10 minutes until peppers are charred.  Important: if you want a mild salsa remove seeds prior to cooking, for medium heat cook with seeds and remove before blending, for extra spicy food process with seeds.  Add the charred vegetable mixture to the food processor with lime zest, lime juice, sugar, minced garlic, and salt generously. Pulse for 30-60 seconds until you achieve desired consistency. Taste for seasoning. Enjoy!!!
