APWU Chipotle Black Bean Soup

  • 4 15.5 oz cans Organic Black Beans
  • 4 tbsp olive oil
  • 4 cups water
  • 2 tbsp Better Than Bullion, reduced sodium
  • 1/2 cup deseeded minced Jalapeño
  • 2 tbsp chopped chipotle peppers in adobo
  • 4 tsp adobo sauce
  • 1 tsp fresh chopped oregano
  • 1 cup minced sweet onion
  • Salt to taste
  • Garnish

Preheat a large stock pot to medium and add olive oil. Add minced onion and jalapeño to pot and sauté until translucent approximately 4-6 minutes.  Add drained beans, water, chipotle peppers, adobo sauce, oregano, bullion, and water.  Bring to a boil and reduce heat to medium low and continue to cook for 35-45 minutes or until the broth begins to thicken. Taste for seasoning. Transfer soup to individual bowls and garnish with sour cream, lime zest, guacamole, and minced jalapeños. Enjoy!
