APWU Original Chili


Ingredients

  • 1 lb 80/20 ground beef
  • 1 lb 90/10 beef
  • 1 lb ground pork
  • 2 tsp salt, additional to taste
  • 1 tsp chili powder Mexican hot
  • 3 tbsp of chili powder + 2 tsp chili powder
  • 1/4 tsp smoked paprika
  • 2 tbsp dried parsley
  • 1 1/2 tsp cumin
  • 4 tsp paprika
  • 2 tbsp freshly minced garlic
  • 2 1/2 cups sweet onion, chopped
  • 1 cup jalapeño, deseeded and chopped
  • 2 cups green pepper, petite diced
  • add cayenne pepper to taste
  • 3 tbsp organic roasted beef Better Than Bouillon
  • 6 cups water
  • 12 oz can tomato paste
  • 2, 28 oz San Marzano diced tomatoes 🍅
  • 2 cans of red kidney beans
  • 3 tbsp flour

Instructions

Salt meat with 2 tsp salt and brown in large stockpot. Add all dry seasonings, onion, peppers, jalapeño, garlic, and sauté until translucent, about 20 minutes. Then stir in tomatoes, tomato paste, Better Than Bouillon, drained bean, and water. Continue to cook for 10 minutes, then add flour to thicken. Simmer on low for 2 hours, stirring occasionally. Add cayenne pepper for extra heat and salt to taste. Top with fresh chopped chives, sour cream, and desired shredded cheese.
