4 Ingredients for a delicious twist on a bacon wrapped scallop…hold your applause… and you’re welcome.

Bacon Dusted Scallops

  • 15 Large Scallops
  • 1 lb bacon
  • 1 lemon
  • 2 scallions

Chop raw bacon and add it to a cold pan. Sauté on medium to medium-low until crisp. Remove with slotted spoon and place on paper towel to drain. Do not discard bacon fat.  Add your bacon to your food processor and grind until you have a very fine bacon bit “dust”. Set aside.

Remove the bright green ends of your scallions and cut into one inch pieces and julienne as finely as possible.

In large skillet pour in enough of the reserved bacon fat to generously cover the bottom of the pan. Heat to medium high.  Lightly rinse scallops and pat dry; be sure to remove the small side muscle if still attached.  Place scallops in pan and allow to cook for approximately 1.5 minutes on each side (depending on size).  You are looking for your scallop to have a rich golden brown crust on each side.  Remove scallops and plate on serving dish and spritz lightly with lemon juice.  Spoon bacon dust onto scallops and garnish with julienned scallions.  ENJOY!
