Blueberry Brûlée Mojito

  • 12 blue berries
  • 1 1/2tsp sugar
  • 8 mint leaves
  • 2oz white rum
  • Juice of one lime
  • 3 oz sparkling wine or club soda
  • Muddle sugar, berries and mint

Add lime juice and fill glass 3/4 full with crushed ice. Add 2oz rum and fill to top with sparkling wine. Garnish with mint sprig, lime slice, brûléed blueberry.

Blueberry brûlée: skewer berries on metal skewer. Coat with sugar: pass torch over until bubbling and golden. Repeat and allow to cool. Garnish in glass.
