Chicken Lettuce Wrap with Peanut Dressing

  • 1 lb chicken breast, marinated in olive oil, salt and pepper for at least 40 minutes in fridge.
  • Julienne Veggies (purple cabbage, carrots, cucumber, radish)
  • Peanut Sauce:
    • 4 tbsp peanut butter
    • 3 tbsp honey
    • 8 tbsp rice wine vinegar
    • 2 tbsp low sodium soy sauce
    • 4 tablespoons lime juice
  • chopped salted peanuts
  • green onion and cilantro for garnish

First make your peanut sauce by combining all ingredients in mixing bowl. Whisk until smooth. Refrigerate until ready to serve. Next, rreheat grill to medium high heat (400-450 degrees). Then, remove marinated chicken from fridge and grill approximately 5-7 minutes on each side depending on how thinly you cut your chicken breast. Then julienne your favorite veggies. Slice grilled chicken breast and add all ingredients to a large leaf of bib lettuce. Drizzle with peanut sauce and garnish with chopped peanuts, green onion, and cilantro. Enjoy 🤤
