Crab Louie Tasting Spoon

Ingredients

  • 5 tbsp Mayonnaise
  • 3 tbsp sweet pickle relish
  • 2 tsp stone ground mustard
  • 3 tbsp ketchup
  • 1 tsp Tabasco
  • 1/4 tsp Smoked paprika
  • 1/4 tsp old bay
  • 2 tsp Honey
  • 2 tbsp lemon juice
  • 2 tbsp finely chopped parsley
  • 1 lb jumbo lump crab meat
  • 2 tbsp sliced green onion
  • 5 large radishes -minced
  • 3-4 avocados
  • 1 large English cucumber deseeded

Instructions

Add Mayonnaise, relish, mustard, ketchup, Tabasco, Paprika, old bay, honey, lemon juice, and parsley to a small mixing bowl and whisk until combined. Refrigerate until ready for use. 

Drain crab meat and sift through for any shell. If you are serving as a one bite appetizer be careful to not break apart the the lumps of crab meat. Dice Avocado, radish, and cucumber and layer each item into your single serve vessel. If you don't have tasting spoons small cups would also work!  Add one piece of lump crab t each portion; top with Louie sauce and green onion. This can also be served and an entree and would serve four pair with romaine lettuce and a hard boiled egg and serve the dressing on the side.
