Grilled Japanese Shrimp Cocktail with Sweet Ginger Sauce

Ingredients

Shrimp & Marinade

  • 1 lb raw jumbo shrimp
  • 3 tbsp melted unsalted butter
  • 2 tbsp soy sauce
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • 2 tbsp lemon juice

Sweet Ginger Sauce

  • 1/2 cup mayonnaise
  • 2 tsp tomato paste
  • 1/4 tsp paprika
  • 1 tbsp granulated sugar
  • 3 tbsp water
  • 1 1/2 tsp soy sauce
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 2 tsp freshly grated ginger

Instructions

Preheat grill to 500 degrees. Peel shrimp but do not remove the tails. Melt 3 tbsp of butter and add to a medium sized mixing bowl. To that bowl add the remainder of the marinade ingredients: soy sauce, minced garlic, minced ginger, lemon juice. Add shrimp and fold with rubber spatula until coated. Set aside for 10-15 minutes at room temperature. In a separate mixing bowl add all sauce ingredient and whisk until combined. Set aside until ready for use. If refrigerating and serving at a later time microwave for 10 seconds to melt any coagulated butter. Grill shrimp for approximately two minutes on each side. Serve hot with room temperature sauce. Enjoy!
