Peach season is in full swing so we’re taking advantage of any opportunity to indulge in this seasonal delight! Sweeten up your salad with this one…

Grilled Peach Salad with Lemon Vinaigrette

Lemon Vinaigrette

  • Juice of 2 lemons
  • 2 1/2 tbsp Williams Sonoma House Olive Oil
  • 1 tbsp honey
  • 1/4 tsp salt
  • 1 tsp minced shallot

Add all ingredients to a bowl. Whisk until honey and salt have dissolved.

Salad

  • 3 white peaches
  • 6 mini seedless cucumber
  • 6 oz feta in brine
  • Candied pecans
  • Micro greens

Preheat grill to 500 degrees. Slice peaches in half; remove pits. Coat the peaches with olive oil and sprinkle with salt. Place peach halves on grill – flesh side down – and cook for 1-2 minutes. Rotate the peaches 45 degrees and cook for an additional minute. Remove peaches from grill and allow to cool. Medium dice the cucumbers and arrange them in your bowl or on your serving board. Cube peaches (reserve one grilled peach half for garnish) and crumble feta and add them to the salad. Garnish with micro greens and candied pecans.  Sprinkle with salt and drizzle with lemon vinaigrette.
