Herbed Mozzarella and Caper Berry Toast

  • 1 1/2 cups fresh mozzarella - small dice
  • 5 tbsp chopped caper berries
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tsp chopped parsley
  • 2 tsp chopped basil
  • 2 tsp chopped chive
  • 1 loaf Italian bread
  • grated parmesan for garnish
  • additional olive oil for toasting bread


Drain fresh mozzarella and chop into bite sized pieces. Chop herbs and caper berries. Add mozzarella, herbs, lemon juice, caper berries, and olive oil to a small mixing bowl and fold until mixed. Preheat sauté pan to medium high and add 1 to 2 tablespoons of olive oil toast sliced bread for 1-2 minutes on each side until golden brown. Spoon caper berry mixture onto bread and garnish about a sprinkle of parmesan cheese.  Enjoy!
