Kimchi Egg Rolls with Ginger Lime Honey Mustard

Ingredients

Egg Rolls

  • 1 lb ground pork
  • 1 jar Sunja’s All Natural Medium Spicy Kimchi
  • 1 large garlic clove
  • 1 tbsp grated ginger
  • 1/3 cup sliced green onion
  • 2 tbsp lime juice
  • 2 tbsp kimchi brine
  • 1 tsp salt
  • 1 package egg roll wrappers
  • 1 beaten egg
  • vegetable oil for fryer

Ginger Lime Honey Mustard

  • juice of 1 lime
  • 2 tsp freshly grated ginger
  • 3 tsp Chinese mustard
  • 4 tsp honey
  • 2 tsp water

Instructions

Prepare dipping sauce by adding juice of one lime, ginger, mustard, honey, and water to a small mixing bowl and stirring until combined. Refrigerate until ready for use.

Drain Kimchi and reserve liquid; rough chop kimchi until all pieces are bite sized. Sauté ground pork in a large pan until fully cooked. Add kimchi, garlic, salt, lime juice, ginger, and kimchi liquid to the pan with the ground pork. Cook on medium high until the liquids have evaporated 3-5 minutes. Fold in green onion. Spoon egg roll filing into egg roll wrapper and follow folding diagram on the back of the package; brushing corners with your egg wash to secure folds. Heat oil to 375 degrees in either a deep fryer or heavy pan and fry in batches until golden brown 1-2 minutes. Drain on paper towel and serve with dipping sauce. Enjoy!
