Lollipop Lamb Chops with Mint Chimichurri

Yields 12 lamb chops

  • 12 appetizer size lamb chops
  • 4 tbsp olive oil
  • salt
  • Mini Chimichurri
    • 3 tbsp chopped parsley
    • 2 tbsp chopped mint
    • 1/2 tsp salt
    • 3 tbsp red wine vinegar
    • 1 tbsp sugar
    • 1/2 of a small shallot

First make your chimichurri by combining all ingredients listed above in food processor. Pulse for 30-60 seconds until smooth. Remove lamb from refrigerator 1 hour before grilling. Rub with olive oil. Prior to grilling, salt generously. Pre-heat grill to high. Grill on high heat 2-2 1/2 minutes on each side for medium rare. Plate and top with chimichurri.
