Pineapple Three Pepper Ceviche

  • 1/2 petite diced cored pineapple
  • 1/2 cup minced jalapeno
  • 1/3 cup Red Fresno Pepper
  • 2 tbsp minced Serrano pepper
  • 1 tsp lime zest
  • 1/2 tsp orange zest
  • 1/8 cup olive oil
  • 1/4 cup lime juice
  • 1/2 lb pre-cooked large Wegman's shrimp


First remove tails from shrimp and dice into small pieces.  Add to large mixing bowl. Then core and dice pineapple and add to bowl. Deseed and dice all peppers, add to bowl. Add orange and limi zest, olive oil and lime juice. Mix all ingredients together and refrigerate for 30 minutes. Serve chilled and enjoy!
