APWU Smoked Pork Pâté Deviled Eggs

Ingredients

  • APWU Not Your Mama's Deviled Eggs
  • 4 cups finely ground Smoked Pork Chop (substitute ham steak if desired)
  • 1/2 cup finely chopped celery
  • 3 tbsp chopped scallion
  • 6 tbsp mayonnaise
  • 1/2 tsp dried mustard
  • 1 tsp stone ground mustard
  • 1 large jalapeño (deseeded and minced)
  • 3 tbsp Woodstock Sweet Pickle Relish
  • salt to taste

Instructions

Prepare APWU's Not Your Mama's Deviled Eggs. 

Remove smoked pork chop meat from the bone and cube; removing any visible fat. Add meat to your food processor and pulse until finely ground. Add mayo, pickle relish, green onion, jalapeño, dry mustard, mustard, and celery to a medium mixing bowl and whisk until combined. Fold in smoked pork and taste for seasoning. 

Fill each egg approximately half way with deviled egg filling and top with smoked pork chop pâté. Top with thinly sliced green onion.  Enjoy!
