BBQ Butter Grilled Shrimp


Ingredients

  • 1 lb jumbo shrimp peeled and deveined
  • 3 tbsp butter
  • 1 tbsp tamarind chutney
  • 1 tbsp hot curry paste
  • 2 tbsp Rufus Teague Touch of Heat BBQ Sauce
  • 1 tbsp lemon juice
  • 1 tbsp avocado oil - substitute with any high smoke point oil

Instructions

Preheat your grill to medium-high and be sure to clean and oil grates. Peel and devein shrimp is necessary and be sure to thoroughly pay them dry.  Toss shrimp in avocado oil until thoroughly coated. Melt butter over low heat in a small saucepan.  Add tamarind chutney, hot curry paste, lemon juice, BBQ sauce, and whisk until well combined. Grill for approximately two minutes on each side (adjust cooking time based on the shrimp size), brush each with bbq butter sauce, and grill for an additional minute on each side. Serve immediately.  Enjoy!
