Carrot Cream Cheese Beet Napoleon


Ingredients

  • 1 package of Love Beets
  • 8 oz Philadelphia cream cheese
  • 2 heaping tbsp golden raisins
  • 1 tbsp Braggs apple cider vinegar
  • 1/2 cup finely chopped carrot
  • 1 tbsp minced onion
  • 1/4 tsp salt
  • green onion for garnish
  • 3 tbsp chopped and toasted pistachios

Instructions

Soften cream cheese outside the refrigerator for 30 minutes. Add the carrots to your food processor and pulse until finely chopped and transfer to a mixing bowl. Add golden raisins, vinegar, salt, and onion to the food processor and pulse on high until minced. Transfer to mixing bowl with the grated carrot. Add the softened cream cheese and fold until thoroughly mixed.  Taste for seasoning and refrigerate for one hour or until ready for use.  Slice beets, spoon a thin layer of cream cheese mixture sprinkle with chopped pistachio and repeat. Garnish with grated carrot, toasted pistachios, and chopped scallions! Enjoy!
