Lemon Herb Garbanzo Salad

Ingredients

  • 1, 15 oz can Garbanzo beans
  • 2 tbsp olive oil
  • 2 tbsp minced jalapeƱos
  • 1 tsp lemon Zest
  • 2 tbsp lemon juice
  • 1/4 tsp kosher salt
  • 1/4 tsp Dijon mustard
  • 1 1/2 tbsp white balsamic vinegar
  • 1/4 tsp black pepper
  • 2 tbsp finely chopped parsley
  • 2 tbsp finely chopped cilantro
  • 3 oz crumbled feta

Instructions

Drain and rinse garbanzo beans and transfer to a medium-sized mixing bowl with onion, JalapeƱo, parsley, and cilantro. In a small mixing bowl whisk together olive oil, lemon juice, mustard, salt, pepper, lemon zest, and white balsamic. Pour the dressing over the chickpeas and fold gently until evenly coated. Refrigerate for 30 minutes. Top with crumbled feta prior to serving.  Enjoy!
