Roasted Red Pepper & Crab Stuffed Mushrooms

Ingredients

  • 20-25 baby bella mushrooms caps
  • 3 tbsp olive oil
  • 1 lb jumbo lump crab meat
  • 1 1/2 tbsp lemon juice
  • 1/3 cup mayonnaise
  • 1/2 cup chopped roasted red peppers
  • 2 tbsp chopped scallion
  • 1/2 tsp dijon mustard
  • 3 tbsp Panko bread crumbs
  • 2 tsp Old Bay seasoning
  • 2 tbsp minced jalapeño
  • zest of half a lemon
  • salt to taste

Instructions

Preheat oven to 425 degrees. Add mayonnaise, mustard, green onion, Old Bay, lemon juice, lemon zest, minced jalapeño, and chopped roasted red pepper and stir until thoroughly combined. Fold in crab meat and taste for seasoning. Add Panko bread crumbs. Remove stems from mushrooms and remove any dirt using a dry paper towel. Brush large glass baking dish with olive oil and arrange mushrooms leaving a little space between each for even cooking. Drizzle mushrooms with the remainder of olive oil and sprinkle with salt . Spoon mixture into mushrooms and bake for 20-25 mins until golden brown.  Enjoy!!
