Summer Corn Salad


Ingredients

  • 1 1/2 cups halved cherry tomatoes
  • 15 basil leaves
  • 2 1/2 cups corn off the cob
  • 2 1/2 tbsp olive oil
  • 1/4 tsp salt
  • 3 Tbsp fresh chopped chives
  • 2 Tbsp minced jalapeño
  • 2 1/2 Tbsp rice wine vinegar
  • Pepper to taste
  • Parmesan cheese for garish

Instructions

Whisk together olive oil, rice wine vinegar, and salt in a small mixing bowl. Add the corn, tomatoes, minced jalapeño, basil chiffonade, and chives. Fold until evenly dressed. Taste for seasoning. Too with freshly grated Parmesan.  Enjoy!
