Crab Linguini alla Vodka

  • 1 lb of linguini
  • 1 lb crab meat
  • 1 cup half and half
  • 8 oz Philadelphia Cream Cheese
  • 1/3 cup Vodka (hello Tito’s!)
  • 2 tbsp pressed garlic
  • 2/3 cup olive oil
  • 1/2 cup fresh basil chiffonade
  • 30 oz tomato sauce
  • 2 tbsp salt
  • pinch of red pepper flakes
  • Garnish:
    • chives
    • generous portion of parmesan cheese

Boil 6 quarts of salted water (2 tbsp salt). Once the water has come to a boil add the linguini pasta and stir. Cook to al dente (follow directions on package). Drain and set aside (drizzle with small amount of olive oil to keep it from sticking). In a sauce pot, add 1/3 of the cup of olive oil to the pan with the garlic and sauté on medium heat until garlic is translucent (about 2-3 minutes). Then add the red pepper flakes and the vodka. Simmer for 3-5 minutes and add the tomato sauce, basil and salt. Continue to simmer sauce for 15 minutes, then add cream cheese and half and half. Simmer another 3-4 minutes. Add pasta into pot, stir to coat with sauce. Remove from heat, fold in crab. Garnish and serve.
