Mediterranean Bikini Bites

  • 10-12 Campari Tomatoes
  • 2 cups cucumber (petite diced)
  • 4 tbsp shredded Asiago Cheese
  • 3 tbsp minced mixed Mediterranean Olives
  • 1 tbsp minced sweet onion
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 tbsp white balsamic vinegar
  • Salt and pepper to taste

Slice each Campari Tomato in half and remove the pulp using a small melon baller.  Sprinkle each tomato half with salt and pepper and arrange on your serving dish. Add diced cucumber, minced olives, onion, and Asiago cheese to a medium-sized mixing bowl. In a separate mixing bowl whisk together olive oil, vinegar, and lemon juice. Stream in the dressing while folding gently with a rubber spatula until evenly coated. Add salt and pepper to taste. Fill each tomato half with the cucumber mixture. Garnish with freshly ground black pepper.  Enjoy!
