The Black and Blue Salad with Sweet Mustard Vinaigrette
Salad:
- Mixed Greens
- Crispy Prosciutto (crisp in pan over medium with with 1 tsp olive oil)
- Halved black raspberries
- Smoked blue cheese
- Toasted pine nuts
Dressing:
- 1/4 cup Wegmans honey Dijon mustard
- 1/2 cup olive oil
- 1/4 cup rice wine vinegar
- 1 tbsp honey
- 1 tsp salt
Add mustard to a mixing bowl and slowing stream in oil while whisking. Whisk until smooth and add the remaining ingredients. Refrigerate until ready to serve.
