In honor of National Bikini Day (yesterday, July 5th), we whipped up some #bikiniapproved and #APWUapproved bite sized snacks that we love to nosh on. Curb your cravings with these little delights…
Yields 10-12 servings (bites!)
- 4-6 ounces Smoked Salmon (Nova Trim)
- 8 ounces Crème fraîche
- Capers packed in white balsamic
- Chives
- 1 English cucumber
Slice English cucumber on a bias. Add crème fraîche to a piping bag. If you do not have a piping bags – no problem – make your own. Use a small sandwich bag and trim the corner with scissors, Pipe crème fraîche onto the cucumber slices. Add 5-7 capers and layer with smoked salmon. Top with chopped fresh chives. Garnish with additional caper and chive matchstick. Please note these #bikinibites are best when served immediately after plating as the cucumbers will release water as they sit.
