Basil Parmesan Prosciutto Asparagus
- 25 asparagus spears
- 25 pieces prosciutto
- 6 oz Parmesan cheese
- Approximately 35 basil leaves
Preheat the oven to broil on high and arrange a rack about 6 inches below the heating element.
Remove the tough ends of each stalk by bending the asparagus and allowing to break naturally; each piece will be slightly different. Lay a few pieces of the prosciutto on your cutting board and grate approximately one tsp of parmesan evenly over each piece. Add 1-2 basil leaves depending on size. Beginning with the scaled tip of the asparagus, wrap each spear with 1 slice of prosciutto in a downward spiral toward the cut end. Place on the baking sheet. Repeat with the remaining stalks, and be sure to leave space between each spear to ensure optimal crispness. Broil for approximately 2-3 minutes or until prosciutto looks crisp, then quickly remove from the oven and turn each piece. Continue to broil until the prosciutto is crisped and deep golden brown, about an additional 2-3 minutes. Be sure to keep a close eye on them as anything under the broiler is at a major risk of burning! Asparagus eight medium thickness works best for this recipe. Drizzle with aged balsamic or eat plain!
