Crispy Skin Salmon
- 4 small salmon filets with skin
- Orange Dill Beurre Blanc
- 2/3 cup white wine
- 3 tbsp butter
- 2 tsp orange zest
- 1 tbsp dark brown sugar
- 3 tbsp fresh orange juice
- 1 tbsp fresh dill
First make your beurre blanc… Add white wine to sauce pan. Over medium heat reduce by half. Add sugar, orange juice, and zest. Whisk until sugar has dissolved. Remove from heat add butter and dill. Whisk until butter has melted. Then, cook salmon… heat non-stick pan with two tablespoons olive oil on medium-high heat. Pat salmon dry and rub with olive oil; salt generously. Place in pan skin side down for approximately 4 minutes until skin is crisp. Turn and cook for an additional 2-3 minutes. Plate and drizzle with orange dill beurre blanc. Enjoy!
