2 lbs Brussel sprouts halved
2 tbsp vegetable oil
Salt and pepper to taste
1/2 cup water
1/4 cup sugar
1/4 cup reduced sodium soy sauce
2 whole garlic cloves
2 dried chili peppers
1 inch piece of peeled ginger
2- 3 inch pieces orange rind
1 tbsp toasted sesame seeds
Preheat oven to convection roast at 425. Toss halved and cleaned brussel sprouts in oil and sprinkle with salt and pepper. In a medium sauce pan combine water, sugar, soy sauce, garlic, dried chilies, ginger, and orange. Bring to a boil and reduce heat to a slow boil. Reduce by half until slightly thick. Roast brussel sprouts until slightly charred al dente. Remove sauce from heat and add sesame seeds. Plate Brussels and drizzle with sesame glaze. Garnish with additional toasted sesame seeds. Serve immediately. Enjoy!
