APWU Antipasto Crostini

Ingredients
- 1/2 cup finely chopped mixed Mediterranean olives
- 3/4 cup chopped Genoa salami
- 1/4 cup marinated artichoke hearts
- 3/4 cup APWU marinated mushrooms
- 1/2 cup petite diced mild Gouda
- 1 medium garlic clove
- 1 tbsp chopped green onion
- 2 tbsp chopped parsley
- 2 tbsp grated Parmesan cheese
- 2 tbsp olive oil
- 1 1/2 tbsp white wine vinegar
- 1 box crostinis
- pinch of red pepper flakes
Instructions
Chop olives, artichokes, mushrooms, cheese, salami, parsley, and green onion. Add all ingredients to medium sized mixing bowl and fold with a rubber spatula until combined. Serve on crostini. Enjoy!
