APWU Chipotle Black Bean Soup
- 4 15.5 oz cans Organic Black Beans
- 4 tbsp olive oil
- 4 cups water
- 2 tbsp Better Than Bullion, reduced sodium
- 1/2 cup deseeded minced Jalapeño
- 2 tbsp chopped chipotle peppers in adobo
- 4 tsp adobo sauce
- 1 tsp fresh chopped oregano
- 1 cup minced sweet onion
- Salt to taste
- Garnish
- 1 lime
- 1 cup sour cream
- APWU Perfect Guacamole
- minced jalapeño
Preheat a large stock pot to medium and add olive oil. Add minced onion and jalapeño to pot and sauté until translucent approximately 4-6 minutes. Add drained beans, water, chipotle peppers, adobo sauce, oregano, bullion, and water. Bring to a boil and reduce heat to medium low and continue to cook for 35-45 minutes or until the broth begins to thicken. Taste for seasoning. Transfer soup to individual bowls and garnish with sour cream, lime zest, guacamole, and minced jalapeños. Enjoy!
