Our hair might have gone flat and our makeup melted off in the heat, but we achieved perfectly grilled chicken skewers… and it was sooooo worth it. Try these for your next summer dinner.
Italian Seasoned Chicken Skewers
Yields 6-8 servings
- 1/4 cup white wine
- 1/3 cup @williamssonoma House Olive Oil
- 1 tbsp lemon zest
- 2 tsp salt
- 2 tbsp fresh oregano
- 1 tsp fresh cracked black pepper
- 1 tbsp minced red onion
- 1 tbsp minced garlic
- 1/4 cup Wegmans basting oil (made with organic sunflower oil!)
- 2 tsp lemon juice
- 3 lbs boneless skinless chicken thighs
Rinse chicken and pat dry. Slice chicken into strips approximately 1 inch wide. Set aside.
In large mixing bowl add the remainder of the ingredients and mix thoroughly. Add chicken and marinate for up to 24 hours. Skewer chicken on metal grill skewers. Make sure your grill is clean and greased; you can do that by using paper towels and vegetable oil. Preheat grill to medium high heat (400-450 degrees) and grill approximately 4-5 minutes on each side depending on how thinly you cut your strips. Remove from heat and drizzle with olive oil. Garnish with fresh chopped oregano and lemon zest.
