Miranda’s Eggs Rustica
- 1/4 cup minced shallot
- 1/4 cup olive oil
- 1/4 cup capers
- 1/4 cup balsamic vinegar
- 4 cups chopped Campari tomatoes
- 1 tsp salt
Add shallot, olive oil, capers, balsamic vinegar, and salt to mixing bowl. Fold in tomatoes. Grill sliced Italian bread in pan with olive oil on each side as if you were making grilled cheese. Top with poached egg and tomatoes. Garnish with parsley.
