If you’ve been following along, by now you understand our complete love affair with cheese. Today we were craving a grilled cheese (yes, again, you caught us #noshame)…check this ‘adult grilled cheese’ out..
Open-Faced Ricotta Grilled Cheese
- 1 cup whole fat Ricotta cheese
- 3 tsp olive oil
- 2 tsp chopped chives
- 2 tsp lemon juice
- salt to taste
- 4 oz prosciutto
- 1/2 cup fire roasted tomatoes (we like them from Wegmans’ Self-Serve Olive Bar)
- watercress or arugula
- 1 loaf Italian bread
- 2-4 tbsp butter
In small mixing bowl add Ricotta cheese, 2 tbsp olive oil, chives, lemon juice, and salt. Set aside. Slice bread about 1 inch thick. Add butter 1 tbsp at a time to your sauté pan and grill bread in batches – 1-2 minutes on each side until golden brown. Then slice prosciutto into strips and sauté in 1 tbsp of olive oil over medium heat for 5-7 minutes or until crisp. Drain excess fat on paper towel. Add Wegmans’ Olive Bar fire roasted tomatoes to your food processor and pulse until they become the consistency of a thick salsa. Drizzle lemon juice and olive oil over your arugula or watercress. Toss until coated and sprinkle with salt. Spoon Ricotta mixture onto bread slices, add dressed greens, fire roasted tomatoes, and finish with crispy prosciutto! Enjoy!
