Oh, we love holidays that fall on Mondays. But what we love more is collaborating with fabulous #bossbabes with the same foodie interests as us… introducing Sweet Aloha Food Truck, an amazing mobile superfood cafe, created by our very lovely friend, Janeen.
It just so happened that we were getting together on #NationalPinaColadaDay, so of course we made the biggest, baddest, most decadent smoothie bowl we could create… proving that 3 blondes are better than 2! ๐๐ผ๐๐ผ๐๐ผ
Pina Colada Smoothie Bowl
Yields 1 Enormous Bowl (or two regular smoothie bowl servings)
- 1/2 cup sweetened condensed coconut milk (Natures Charm)
- 1 cup coconut water (Zico Coconut Water)
- 2 cups frozen pineapple
- 2 cups frozen peaches
- 2 tbsp coconut butter (Essentially Coconut Butter)
Add liquid ingredients (condensed coconut milk and coconut water) to Vitamix then add the remainder of ingredients and blend until smooth, using tamper when necessary. (Yes it’s that simple!) We served ours in a hollowed out pineapple, but a simple bowl works! Then add your choice of toppings! We used shredded coconut (Trader Joe’s), shaved coconut (more Trader Joe’s), granola (Michele’s Granola), halved bing cherries, sliced fresh peaches, hemp seeds (Manitoba Harvest Hemp Foods) and finished it off with a drizzle of local honey. Swoon.
Dig in, or it will melt in this heat!
