APWU Avocado Jalapeño Cheddar Toast
Yields 1 Serving
- APWU Guacamole
- slice of Wegman’s Jalapeno Cheese Bread
- 1 large brown egg
- jalapeño slices for garnish
- cilantro chiffonade for garnish
First prepare your guacamole…
- 4 ripe avocados
- 1/3 cup minced red onion
- 1 tbsp lime zest
- 1/3 cup lime juice
- 1 tsp sea salt
- 1/3 cup minced jalapeño
Slice avocados open vertically and remove the pit. Scoop out flesh with a spoon into glass mixing bowl. Mash avocado with fork creating smaller pieces. Add all other ingredients and mash until combined. Set aside.
Prepare frying pan with 1 tsp olive oil and heat to medium. If available use a metal or silicone ring mold to hold you egg while it cooks. Place mold in pan, then crack egg into a cup and slowly transfer egg to mold in pan. Cook egg to desired firmness. We prefer a ‘dippy’ eggs for our avo toast so about 1 to 1 1/2 minutes should do the trick. Meanwhile, slice a thick piece of the cheese bread and either toast in a toaster oven or toast with 1 tbsp of olive oil per side in another frying pan on medium-high heat. Place toast on a plate, smother it with desired amount of guac, then place dippy egg on top and garnish with jalapeño slices, cilantro chiffonade and salt and pepper. Dig in.
