APWU Avo Eggs

Ingredients

  • 6 extra large eggs
  • 1 large avocado
  • 1 juice of 1 lime
  • 2 tbsp mayonnaise
  • 1 garlic clove minced
  • 1 jalapeño pepper finely minced
  • 1/4 tsp kosher salt- more to taste
  • 1/4 tsp lime zest
  • Canned Chipotle peppers in adobo sauce

Instructions

Place eggs in pot (single layer) and cover with water and bring to a boil. Turn off heat and cover for 12 minutes. Remove eggs, crack one at a time and start to peel under cool running water. Gently dry them with a paper towel, then slice in half lengthwise. Remove the yolks and place whites on a large serving platter. Mash the yolks with the avocado, mayonnaise, minced garlic , lime zest, lime juice, minced jalapeño, until mostly smooth.  Using a small spoon add a few drops of the adobo sauce each of the eggs prior to filling them. Pipe the avocado mixture into the eggs and top with a slice of chipotle pepper. Enjoy!
