APWU Salsa Verde
Ingredients
- 1 1/2 lbs husked tomatillos
- 1/2 large sweet onion
- 1 large garlic clove- additional to taste
- 2 jalapeños deseeded
- 1 Serrano pepper deseeded
- 2 tbsp olive oil
- 1/2 tsp salt - additional to taste
- 2 tbsp lime juice
- 1 tsp sugar - additional to taste
- 1/2 cup fresh cilantro
Instructions
Husk and quarter your tomatillos, rough chop onion, deseed jalapeños and serranos. Preheat olive oil in a large sauté pan to medium-high. Add the peppers, tomatillos, and onion to the sauté pan and cook undisturbed until they begin to char then flip and brown the other side. Transfer to a good processor and add salt, sugar, lime juice, a garlic clove, and cilantro, and pulse until you reach the desired consistency (we prefer a little texture, so we don’t pulse until smooth). Taste for seasoning. Refrigerate until ready for use. Enjoy!
